Ingredients

2 1/2 cups flour
1/2 cup unsweetened coco powder
2 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
1 tsp ground cinnamon
3/4 cup butter or marg
2 cups sugar
3 eggs
3 cups finely shredded unpeeled zucchini
1 cup chopped walnuts
2 tsp vanilla
1/2 cup milk
Cream Cheese Frosting


Procedure

Grease and lightly flour a 10" tube pan(I use a long cake pan). Stir together flour, cocoa,baking powder, baking soda, salt and cinnamon. In a large mixer bowl, beat butter on medium speed of electric mixer for about 30 seconds. Add sugar and beat until flufft. Add eggs, one at a time, beating well on medium speed, Stir in zucchini, nuts and vanilla.

Add dry ingredients and milk alternately to beaten mixture, beating on low speed after each addition. Turn into prepared pan. Bake in a 350 degree oven about 1 hour or until cake tests done. Cool on wire rack 10 min. Remove cake from pan and cool thoroughly. Frost with Cream Cheese Frosting. Makes 12 servings.

Cream Cheese Frosting:

In mixer bowl, beat together two 3-ounce pkgs softened cream cheese, 1/2 cup butter/marg and 2 tsp vanilla till fluffy. Gradually add 4 cups sifted powdered sugar beating till smooth.
