Meat Loaf Potato Roll Up
Ingredients
2 beaten eggs
1 8oz can tomato sauce*
1/2 cup finely crushed saltine crackers (14)
1/4 cup finely chopped chopped onion
2 tbsp chopped green pepper
3/4 tsp salt
1 1/2 lbs ground beef
packaged Instant Potatoes (enough for 4 servings)**
2 tbsp snipped parsley
1/4 tsp dried thyme, crushed
1/8 tsp dried marjoram, crushed
* I used 1 cup Sweet and Sour Sauce instead
** I used real mashed potatoes, enough for 4 servings
Procedure
In a bowl combine eggs and 1/3 cup of the tomato sauce. Stir in cracker crumbs, onion, green pepper and salt. Add ground beef; mix well. On foil or waxed paper pat meat mixture into a 10" square; set aside
Prepare packaged intant mashed potatoes according to package directions except omit butter. Stir parsley, thyme and marjoram into potatoes. Spoon mixture across centre of center of meat. Using foil to lift, fold sides of meat over potatoes; seal seam and ends. Place, seam side down, in shallow baking pan. Bake in 350 degree oven about 45 minutes. Spoon remaining tomato sauce over loaf.
