Ingredients

Dough:

2 Tbsp oil
3/4 cup water
1 egg
2 1/2 cups flour

fillings:


1. 1 cup sauerkraut ( rinsed and squeezed dry) and 1/2 cup cottage cheese
2. 1 cup blueberries or saskatoons and 2 tbsp sugar
3. 1 cup mashed potatoes with 2 tbsp butter or cheese whiz added
4. 1 cup dry cottage cheesemixed with 1/2 tsp salt and 2 tbsp mashed potatoes


Procedure

To prepare dough:

Beat oil, water and egg. mix in the flour. Knead into a ball..Let stand for 15 minutes. In the meantime, prepare one or more of the fillings above. Then divide dough into 1" balls and out to 1/8" thick. Place about 3/4 tspof chosen filling in the centre. Fold in half and press together with your fingers. Boil in salted water for 3 minutes. To freeze, place on a cookie sheet, freeze and bag when frozen. Serve with sour cream, fried onions or bacon. Fruit filled perogies are nice with fresh cream.
